  • Chicken mince works perfectly in lots of different cuisines, from Asian to European, Middle Eastern to Scandinavian. Season your mince and combine with finely shredded ginger, garlic, chilli, lemongrass and fresh coriander. Form into small balls and fry in a wok until starting to brown. Add chicken stock, soy and a splash of sweet chilli. Bubble for 5 minutes until the chicken is cooked then serve with udon noodles and wilted pak choi.
