Cut from the hind leg of the lamb carcass, there's nothing to beat an organic leg of lamb for robust flavour and super-succulent meat. With a thin layer of fat beneath the skin, gentle marbling throughout the meat and between the muscles this is a rewarding joint that's really easy to cook and makes a really satisfying centrepiece. Leaving the bone in adds flavour as the joint cooks and you get the added benefit of oozing, melty bone marrow adding further juiceness to the meat.
Lamb has a bit of a reputation for being a spring delicacy, but we think it should be enjoyed all year round! The lamb are raised in a fully grass-fed environment, living naturally, free-range which produces meat with really distinctive flavour.
Our lamb is all grass fed so these happy little sheep spend their lives in the fields, the way it should be. They graze freely on organic pastures, roaming acres of luscious rolling hills. A clover-rich diet gives the meat a healthy covering of fat and marbling throughout, creating meltingly-soft roasting joints, succulent centre-pieces and tender, quick cooking steaks.
