Lamb heart is, as far as we're concerned, one of the very best bits of the lamb carcass. You'll never see it in the supermarket and rarely on the butcher's counter so it's not surprising people aren't sure what to do with it. With an intense but delicate flavour and soft, tender texture, lamb heart is packed with protein and rich in nutrients. It's also an incredibly thrifty and versatile cut that comes conveniently portioned.

  • Of all the muscles in the lamb carcass, the heart has without a doubt worked the hardest. This means it's dense and robust, but that needn't translate as tough or chewy. To ensure ultimate tenderness, braise your organic lamb hearts in a rich stock and flavoured with lots of garlic and rosemary. Cook in a low oven for two or three hours until the liquid is reduced and the heart is soft. Serve with vibrant wilted greens and creamy mash or polenta.
